During the music inspection does the program attempt to "match" songs that are in my collection with the central database in order to fill in key/bpm values? Can I set the program in a way that I want it to analyze library for the values rather than match?

    Yes - simply uncheck all 'use online resources' checkboxes in the Analysis Options dialog, which is shown when you add songs to the analysis queue.
