Embed non-iTunes fields
So, I've read some of the other posts on this subject, but still can't grasp exactly what happens, so here goes. I have an itunes based, not folder based. So basically it updates all the tags with the Beatunes columns. So, when the tags are embedded, does that allow me to make the same columns in the music app (Mac) as are shown on Beatunes? Why does it warn you that these changes are permanent? What nasty things can happen if it does not do the embedding properly. Before I do this, I want to be sure my collection is not going to be wiped out or turned into a pumpkin, etc. Cheers everyone.

Not being a DJ or having any real understanding about creating music, I just don't absorb a lot of the stuff I've read on this. What I really want to know is, if you embed the non-itunes fields into the songs, does that then allow you to add those columns ie: key, color, mood etc in the music app?

The quick answer here is: No.
When using beaTunes with iTunes/Music, beaTunes tells iTunes/Music to store new values for all tags iTunes/Music supports. For example names, BPM values, etc. But not key, segments, mood etc., simply because iTunes/Music does not support this values. Instead, beaTunes stores these values in its own database. Now, if you want to store the values not only in beaTunes' database, but also in the audio files themselves, you have to turn embedding for non-iTunes/Music fields on.
